4 C whole milk
8 egg yolks
1-1/2 C sugar (less)
1 green lemon peel
1 cinnamon stick
4 Tbsp corn starch dissolved in 1/4 C water
pinch of salt
1 tsp vanilla

Directions:
Directions:
Boil the milk with cinnamon stick, lemon peel and salt. Drain it an let it cool. Beat the eggs yolks with the sugar (well mixed). Slowly add the cool milk and the corn starch dissolved in the water. Put in a pan over medium heat and stir constantly with a wooden spoon; it will start to thick. When it is smooth retired from heat and put in a serving bowl. Let it cool.

Refrigerate it cover until you are going to used it

Is a good recipe to use as a filling for éclairs, pastry puffs, etc.

Excellent dessert by itself with some ground cinnamon on top.
