Note, all ingredients are approximate, this is a season to taste recipe and can be made with larger or smaller amounts.

5 lbs potatoes
2 large cloves garlic, minced or finely chopped
6 green onions, chopped
2 heads parsley, chopped

Lemon juice
virgin olive oil
salt

Directions:
Directions:
Boil potatoes, then cool and dice. In small bowl, with mortar and pestle, pound garlic with 2 tsp. salt. Then add about 1 Tbsp of olive oil, and stir into garlic/salt mixture. Let set for a few minutes, then when potatoes are ready and cooled off, pour garlic/salt/olive oil mixture over potatoes and toss with parsley and onions. Add more oil, salt, and add lemon juice to taste.
