2 1/2 cups Milk
6 tbsp. melted Butter
6 tbsp. Flour
1/4 cup freshly grated Parmesan Cheese
1 cup Cream or Half & Half
1 tsp. Salt
1 tbsp. Dijon Mustard
1/4 tsp. White Pepper
4 boxes Boiling Onions
Minced Parsley

Directions:
Directions:
Scald milk by heating until bubbles form at edge. Combine melted butter, flour and cheese in blender. Blend. With blender running, pour hot milk through the center. Scrape down the sides and blend until smooth. Pour the mixture into medium saucepan over medium heat. Add cream, salt, mustard and pepper. Stir until thick and smooth. Cool, then refrigerate until ready to assemble. Heat 3 quarts of water to a boil. Boil onions until just tender. Cool and then peel. Cover and refrigerate until ready to assemble. To assemble, reheat onion and sauce separately over medium heat. Pour onions into a casserole and top with sauce. Sprinkle with minced parsley.
