4 Portabella mushrooms (about 3 ounces each),stem removed, wiped clean
Olive oil spray
4 Tablespoons tomato sauce
Pepperoni slices (optional)
8 Tablespoons shredded Mozzarella cheese

Directions:
Directions:
Heat oven to 425º
Spray both sides of the mushroom caps with olive oil spray and place on a foil-lined baking sheet.
Bake for 30 minutes or until fork tender, turning once halfway through the cooking time. Increase heat to broil.
Top concave side of mushrooms with tomato sauce, pepperoni and cheese.
Place under the broiler for 1 minute or until cheese melts and bubbles.
You can add sausage, bacon, olives, onions, or whatever you like.
