Can use any firm fish such as Cod, Snapper, etc.

1 1/2 lbs. boneless fillets, 1 inch thick
1 can cold beer
2 Tbsp. peanut oil
1 egg yolk
Salt & Pepper to taste
1 cup + 2 Tbsp. flour
1 tsp. baking powder
oil for frying

Directions:

Cut fillets into pieces if equal size (about the size of 2"chicken nuggets"). Combine beer, peanut oil and egg yolk in a bowl. Add salt, pepper, and flour. Beat with a wire whisk until blended and smooth. When ready to cook, add the baking powder and blend well. Heat frying oil to 350º in pan or deep fat fryer. Dip pieces of fish in the batter- 1 at a time. Then gently drop into the hot oil.. do not crowd. Cook about 2-3 minutes, or until golden brown. Transfer to paper towel or newspaper to drain. Serve with tomato horseradish sauce.
