Preheat oven to 400º. Toss 1 lb. fingerling potatoes, halved lengthwise, with 1 tablespoon olive oil; season with salt and pepper. Arrange potatoes in a single layer on a foil lined baking sheet. Roast potatoes until fork-tender and golden brown, 30 minutes, tossing halfway through cooking.
