1 lb. Italian sausage, browned
1 lb. ground beef, browned (or turkey)
6 medium sized green, yellow, orange & red peppers
1 large jar of spaghetti sauce
1 package shredded mozzarella cheese
1 cup white rice (Carolina Extra Long Grain)
1/2 cup Parmesan cheese
1 Tbsp. chopped onion
1 tsp. salt
1 clove garlic minced (can use garlic powder)

Directions:
Directions:
Cook the rice according to the directions. For Carolina rice, boil 2 cups of water. Add a tab of butter or olive oil and 1 cup of rice. Cover and simmer for 20 minutes.

Cut the top of the peppers and clean out seeds inside. Boil peppers in large pot of water for 5 to 10 minutes. In a large bowl, combine the browned beef, sausage, rice to desired mixture, Parmesan cheese, garlic, onion, salt. Pour spaghetti sauce into mixture until all ingredients are covered.

Stuff the peppers. Bake in 350º oven for 30 to 40 minutes. Pull from oven and top with mozzarella cheese. Return to oven until cheese is melted (approx. 3 minutes)

For a healthier version, you can substitute frozen riced cauliflower (microwaved), instead of the rice. Turkey can be substituted for the ground beef.
