1 1/2 tsp. baking soda
1 tsp. salt
1 tsp. cocoa powder
1 cup canola oil
1 cup low-fat buttermilk
1 1/2 cups sugar
3 eggs, room temperature
1 tsp. white distilled vinegar
1 tsp. vanilla extract
1 Tbsp. red food coloring

Heat oven to 375º. Line 2 (12-cup) muffin pans with cupcake baking cups. Sift flour,baking soda and cocoa in a large bowl. Add salt. Whisk to combine. Set aside.

Using a mixer, mix oil, buttermilk and sugar over medium speed until combined. Add 1 egg at a time until combine.

Pour in vinegar and vanilla and continue on medium-high speed until combined, scraping down the sides as needed.

Add dry ingredients in 3 to 4 batches, slowly until combined, scraping down the sides as needed. Carefully add red food coloring and mix until well combined. Pour batter into baking cups, filling halfway. Bake until tops and center are set, about 15 to 17 minutes. When cooled, top with cream cheese frosting.
