Packaged instant mashed potatoes (enough for 4 servings)
4 1½ to 4 ¾ cups all purpose flour
1 pkg. active dry yeast
1 c. milk
½ c. shortening
½ c. sugar
1 tsp. salt
2 eggs

Directions:
Directions:
Prepare potatoes.
In large bowl thoroughly stir 2 cups of the flour and the yeast.
Heat milk, shortening, sugar, and salt until warm.
Stir constantly to melt shortening,
Stir in potatoes.
Add to dry mixture in bowl.
Add eggs.
Beat at low speed for 1½ minute, scraping sides of bowl constantly.
Beat 3 minutes at high speed.
By hand, stir in enough of remaining flour to make a soft dough.
Place in greased bowls, turning once to grease surface.

Cover; refrigerate several hours or up to one week.

To use, remove from refrigerator.
Divide in half and shape first half into 16 rolls.
Place in grated 9 x 9 x 2 baking pan.
Repeat with remaining dough.
Cover and let rise till almost double, 45 to 60 minutes.
Bake at 375º oven for 25-30 minutes.
Remove from pan cool on rack.
