2 tsp dijon mustard
2 tsp olive oil
1/2 tsp dried thyme
2 4 oz chicken breasts
2 red new potatoes, chopped
1 cup baby carrots
1 cup brussel sprouts, halved
salt and pepper

Directions:
Directions:
combine honey, mustard, olive oil, and thyme. add chicken, cover and allow to marinate for 1 hour. preheat oven to 375. spray a cooking sheet with nonstick spray and arrange with vegetables. sprinkle with seasonings and cook for 40 minutes. place chicken in same oven and cook for 25 minutes.
