2 lbs. beef chuck roast, cut in 1½ inch pieces
2 T. olive oil
1- lb. bag baby carrots
3 stalks celery, cut in chunks
1 medium onion, cut in chunks
3 medium potatoes, cut in small chunks
1 pkg. dry stew mix
3 T. minute tapioca
2 tsp. salt
2 T. sugar
1 tsp. black pepper
1-8 oz. can vegetable juice
3 cups water

Directions:
Directions:
In 12-inch skillet brown meat in oil on medium heat. In 6 quart slow cooker,
sprayed with non-stick spray, layer meat, carrots, celery, onion and potatoes.
Sprinkle with dry stew mix, tapioca, salt, sugar, and pepper. Pour juice and water
over top. Cook on high for 3 hours, reduce to low for 2 hours. Serves 6 to 8.
