Ingredients: 3 Large Egg Whites 1/8 Tsp. Cream of Tartar Pinch of Sea Salt 3/4 Cup Superfine Baker's Sugar 1/4 Tsp. Vanilla 1 Cup Freeze Dried Strawberries, coarsely chopped Zest of 1/2 Large Lemon

Directions:Preheat oven to 200 degrees with rack in middle of oven. Line baking sheet with parchment.
In mixer fitted with whisk beat egg whites, cream of tartar and salt for about 1 minute. With the machine running on medium-high speed add the sugar about 1 tablespoon at a time. Increase the speed to high and beat until reaches stiff peaks. Takes about 3-5 minutes. Add the vanilla. Turn mixer off and fold in dried strawberries and zest being very careful not to deflate the meringue.
Using an ice cream scoop (about 1/4 cup size) scoop on to the parchment.
Bake for 2 hours, them turn off the oven and leave for 2 more hours.
Put in airtight container for up to 4 days. |

Notes: These are so delicious and a little different than the traditional meringue. Crispy melt in your mouth good!
Don't try to use fresh strawberries, they have too much water and would completely deflate the meringue.
I don't always have superfine sugar so you can run regular sugar through the food processor and in 30 seconds you have superfine sugar!
