1 1/2 c. sugar
1/2 c. butter, softened
1/4 c. oil
1 tsp. vanilla
2 eggs
2 1/2 c. flour
1/4 c. unsweetened cocoa
2 tsp. coffee crystals
1 tsp. baking soda
1/2 c. buttermilk
2 c. shredded zucchini
1/2 to 1 c. chocolate chips

Directions:

Heat oven to 350º. I Grease and flour 9 x 13 pan.
Combine sugar, butter, oil, vanilla, and eggs. Beat well. Add coffee. Combine flour, cocoa and soda. Sift if needed. Add to sugar mixture alternately with buttermilk. Fold in zucchini and then chocolate chips.

Bake for 35 to 45 minutes. Check early and do not overbake.

Do not let the work zucchini scare you away. This is a great cake. The zucchini keeps it moist. Will keep a long time. I use the chocolate frosting listed in this book for this cake.
