6 egg whites
1 1/2 cup sugar
3/4 cup cornstarch
1/4 tsp. cream of tartar
1/2 cup ground blanched almonds
2 quarts strawberries
1 1/2 pints heavy cream
1/4 cup sugar for whipped cream
1 tsp. vanilla extract

Cover 3 full size cookie sheets with foil. Draw 2 (8") circles on each cookie sheet. Grease and flour circles.

Beat egg whites with cream of tartar on high speed. Beat in sugar a little at a time. Beat additional 5 minutes until mixture is stiff and glossy. Combine ground almonds and cornstarch. Fold gently into mixture. Divide mixture among 6 circles and spread evenly. Bake 15 minutes at 300º until meringues are dry and golden. Meringues must be kept in loosely covered container for several days before serving.

Whip cream until stiff, adding vanilla and sugar to taste. Layer meringues, whip cream and cut up strawberries. Save 5 to 7 whole strawberries to decorate top of cake.
