1 C. Oil
3 Eggs
2 C. Sugar
3 t. Vanilla
3 C. Flour
1 t. Salt
1/4 t. Baking Powder
1 t. Soda
3 t. Cinnamon
2 C. Shreadded raw Zucchini
**1/2 C. Chopped Nuts (optional)

Directions:
Directions:
Combine oil, sugar, and eggs in a large mixer bowl. Beat well. Blend in vanilla and zucchini. Sift dry ingredients together. Add to oil mixture and blend well. Add nuts if desired. Pour batter into 2 loaf pans that are well greased and lightly floured. Bake at 350 º for about 1 hour.
