4 c. all purpose flour
1 3/4 c. vegetable shortening
1 Tbsp. sugar
2 tsp. salt
1 Tbsp. vinegar
1 egg
1/2 c. ice water

Directions:
Directions:
Mix together flour, shortening, sugar, salt with pastry cutter or hands, until looks like small peas. In a dish, combine egg, vinegar and water. Combine with flour until moistened. Form into a disk, cover with plastic wrap and refrigerate. makes 2 double crusts, 9:, plus one pie shell.

Can be frozen.

Great pastry first used by Lorene Elford. Can be found in many cookbooks. I have also used whole wheat pastry flour for 1/2 to all of the flour.
