1 - 4 pound Rump Roast (room temperature)
3 garlic cloves
1 tsp salt
1 Tbsp pepper
1 onion, chopped
1 cup water

Directions:
Directions:
Pre-heat oven to 500 degrees.
Prep the Roast by making 4 to 5 slits in the roast and filling the slits with pepper and a garlic clove.
Pepper the rest of the Roast.
Using a heavy oven safe pan (Dutch Oven works well), put Roast in oven, uncovered, to sear for 20 minutes.
Remove from oven.
Carefully add water and chopped onion.
Cover, tightly and reduce temperature to 275 degrees.
Cook for 20 minutes per pound for rare or longer for medium or well done.
Let rest, covered for 15-20 minutes before serving.
