4 pork chops
Flour, salt, and pepper
3 tablespoons shortening
1-1/2 cups water
3 potatoes, quartered
1 medium onion, diced
3 carrots, cut thickly on the slant
1 box frozen Italian cut green beans
3/4 teaspoon dried oregano

Directions:
Directions:
Dredge the pork chops in a mixture of flour, salt and pepper. In an open pressure cooker, brown the chops in the shortening. Remove and drain off excess grease. Add the water, potatoes, onion, carrots, and beans. Sprinkle with salt, pepper, and oregano. Stir and place chops on top of the vegetable mixture. Cover the pressure cooker and heat it under 10 pounds of pressure to the point where the gauge "jiggles". Once it begins jiggling, cook for 15 minutes.

The sound of that pressure cooker "jiggling" always made my mouth water. It meant good food! This recipe was written out by hand, probably as my Grandma Malee dictated it to my mother...in narrative fashion. So the measurements may not be completely accurate. My mother and my grandmother cooked some dishes by memory...a pinch of this and a handful of that - never worrying about measuring it out (until a pesky granddaughter insisted they do so).
