1 orange bell pepper, cut into thin strips
1 large zuchinni, cut into 1/2" pieces
20 cherry tomatoes
1 red onion, cut into 1/2" pieces
16 mushrooms, chopped
2 tbsp olive oil
4 tsp oregano
salt and pepper
8 oz fusilli pasta
1 cup vegetable broth
8 oz protein
4 tbsp chopped fresh basil

Directions:
Directions:
preheat oven to 450
place first 5 ingredients in a large bowl and toss with olive oil, oregano, salt, and pepper
place vegetable on baking sheet lined with foil and roast for 20 minutes.
cook pasta according to directions, drain and return to pot and add broth. add veggies and top with basil.
