4 to 5 baking potatoes
Oil for deep frying
Salt, Pepper
1/2 cup shredded cheddar cheese
1/2 cup shredded Jack cheese
5 slices of bacon, crisp-cooked and crumbled
1 - 2 tablespoons finely chopped green onions (optional)
Sour cream or any creamy dressing

Bake potatoes at 500º for 1 hour or until fork-tender. Cut potatoes in halves, Scoop out centers of potatoes, leaving 1/4" thick shell. Cook skins in hot oil heated to 400º 3 - 4 minutes or until golden brown and crisp. Drain on paper towels, Season to taste with salt and pepper.

Fill each potato half with some cheddar and Jack cheeses. sprinkle with bacon and green onions. Place under broiler and brown 2 -3 minutes or until cheese melts. Serve with sour cream.
