2-3 Large banana's (3 if using medium size)
1 C sugar
2 C flour
1/2 tsp soda
1/2 C melted butter (1 stick)
1/2 C. shredded coconut (or chocolate chips, if you prefer)
2 eggs
1/2 tsp salt
3T milk
1.5 tsp baking powder
1 tsp vanilla

Directions:

Preheat oven to 350º
Combine bananas, sugar & eggs.
Add milk, flour, salt, soda & baking powder.
Add butter, vanilla & coconut. Put in greased pan.
Bake at 350 for one hour or 30 minutes in small mini loaf pans.
