1 frying chicken, cut in pieces
1 egg
3/4 cup milk
3 tablespoons melted vegetable shortening
1 cup flour
1/4 teaspoon salt
2 teaspoons sugar
Vegetable shortening for frying

Directions:
Directions:
Steam chicken for 20 to 25 minutes until tender. Beat egg with milk, and add melted shortening. Combine flour, salt and sugar, and add to milk mixture, beating until smooth. Salt chicken, and dip in batter. Fry in vegetable shortening heated to 365 degrees (or until a 1-inch cube of bread browns in 60 seconds). Fry chicken until golden brown. Makes 4 servings.

This recipe appeared in the Hartford Courant in 2004. After many requests for the Chicken Coop's fried chicken recipe, a reader submitted this, stating that the recipe is very close to the original. The Chicken Coop was a city land mark located on AsylumStreet near The Union Station. It closed in 1984.
