1/2 c flour
1 tsp baking powder
1/2 tsp salt
10 eggs (large)
2 c low fat cottage cheese (small curd)
4 c monterey jack cheese (grated). If in a rush, use pre-grated Mexican blend cheese
2 small cans chopped mild green chilis

Directions:
Directions:
Beat eggs on medium-high speed for 3 minutes or until light and lemon colored. Combine flour, baking powder and salt. Gradually add to eggs and mix well. Stir in cheeses and chilis.

Pour into greased 9x13 baking dish. Bake uncovered for 35-40 minutes or until knife comes out clean. Let stand 5 minutes before serving.
