1 lb. smoked Hillshire sausage - slice 1/2, boil 10 minutes - drain
1 3 1/2 lb chicken or pieces - boil til done in salt water, reserve stock, skim fat
Set aside 6 cups stock with meat
In 10 qt. pot, heat 1/4 c. veg oil; add 1/4 c. flour over heat & mix with a wooden spoon.
Add: 1 medium onion and cook til tender
Add: Stock and 2 chicken bullion cubes
Add: 1/2 c chopped parsley, 2 cloves garlic chopped, 1 rib celery & 1/2 c chopped green onions - Cook 30 minutes

Add: Chicken and 2 bay leaves
1/2 t. salt and pepper
1/2 t. cayenne pepper
1 T Tony Cachere's creole seasoning
1/2 t Allspice
1 - 15 oz can tomato sauce
1 -- 28 oz. can whole tomatoes - cut

Cook 30 minutes
Serve over rice

This is a recipe from one of my sister's friends, Cynthia. It really is great. I like it better than seafood gumbo, and it does serve at least a dozen people so it's a good time to have a party.
