1 1/4 c oil (or 1/2 c shortening or butter)
1 1/2 c sugar
2 eggs
1 to 2 ounces red food coloring
3 T unsweetened cocoa
2 1/4 c all-purpose flour
1 scant tsp. salt
1 tsp. vanilla
1 c buttermilk
1 tsp. baking soda
1 Tablespoon vinegar

Grease and flour two 8-inch cake pans or spray with a substance such as Baker's Joy. Preheat over to 350 degrees. Cream oil, sugar and eggs. Make a paste with the food coloring and cocoa, and add to mixture. Add flour and salt alternately with vanilla and buttermilk. Alternately add soda and vinegar, and don't beat too hard, only to blend. Divide batter between the two prepared pans. Bake 30 minutes or until done. Remove from oven. Cool on wire rack 10 minutes, then remove cake layers from pan and cool completely. Frost with white icing.

CREAM CHEESE FROSTING
1 stick (1/2 c) butter, softened
8 ounces cream cheese, softened
16 - ounce box powdered sugar
1 tsp. vanilla extract

Beat softened butter and cream cheese until well-blended. Add powdered sugar and vanilla. Beat until creamy. Will frost a 2 layer cake.

I first made this recipe Christmas, 2014. It's easy to make, and it really is good to eat! I found the recipe in the Tampa Tribune.
