1 1/4 c. flour
3/4 tsp. baking soda
1/4 tsp. salt
3/4 stick salted butter, softened
3/4 c. packed brown sugar
1 egg
1 1/2 cup bananas (about 3-4) mashed
1/2 tsp. vanilla
1/2 cup chopped walnuts
1/2 cup chocolate chips (optional)

Grease 9 x 5 in. loaf pan. Combine flour, soda, and salt in a medium bowl. In a large bowl, cream butter and sugar with electric mixer. Add eggs, bananas and vanilla, and beat at medium speed until thick. Add the flour mixture and walnuts, then blend at low speed until combined. Do not over mix. Gently stir in chocolate chips if desired. Pour batter into greased pan. Bake at 325º for 60-70 minutes or until toothpick inserted in center comes out clean and bread pulls away from sides of pan. Cool in pan for 10 minutes. Turn pan on side and cool to room temperature before removing and slicing.
