1 C. syrup
½ C. sugar
1 C. buttermilk
½ t. soda*
3 C. flour*
⅓ C. Wesson oil or ½ C. butter
2 eggs
1 t. ginger & 1 t. cloves
OR 2 t. ginger
OR 1 t. cinnamon & ½ t. cloves

Directions:

Mix sugar and syrup, add oil and then eggs. Add flour, soda, and spices. Add buttermilk. Mix well with hands or electric mixer.

*Can substitute 3 C. self-rising flour for the soda and flour

(Mrs. Parker used to always try to have a hot syrup cake waiting when we got to her house. She told me she wouldn't give me the recipe so I would miss her when she was gone. She finally told me the ingredients, but not the baking time or temperature, so you'll have to use your own judgment!!)

P.S. Mrs. Parker sometimes stacked the layers with applesauce for frosting.
