1/2 lb. Hot Pepper Jack cheese
1 lb. Monterey Jack cheese
10 oz. frozen chopped spinach
2 oz. pimento peppers
1 med. onion, chopped fine
1 c. milk
1/2 tsp. garlic powder
1/8 tsp. salt
1/2 tsp. black pepper
1 c. Sour Cream
1 package Corn Tortilla Chips

Directions:
Directions:
Cut cheese into small chunks. Defrost spinach and drain well. Drain pimentos. Cook onions until opaque. Mix all of the ingredients except for the sour cream and corn chips. Microwave on low heat, stirring often until the cheese is melted and mixture is smooth. 7 -10 minutes. Before serving, stir in the sour cream. Serve with corn chips.
