2 - 6 oz.jars of marinated artichoke hearts
1 small onion, finely chopped
1 garlic clove, minced
4 eggs, beaten
1/4 cup fine bread crumbs
1/4 tsp. salt
1/4 tsp. fresh ground pepper
1/4 tsp. oregano
1/4 tsp. Tabasco sauce
2 cups sharp cheddar cheese
4 oz. jar of pimento
1 Tbsp. dried parsley

Directions:
Directions:
Drain the liquid from 1 jar of artichoke hearts and discard.
Drain the liquid from the other jar of artichoke hearts into a frying pan.
Add the onion and garlic and saute.
Chop the artichokes into quarters.
Combine eggs, crumbs, salt, pepper, oregano and Tabasco sauce. Stir in the cheese, pimento and artichoke hearts.
Add the onion mixture.
Pour into a 9" square buttered baking dish. Sprinkle the top with parsley.

Bake at 325º F. or 30 minutes or until lightly set.
Cut into 1" squares.
