1 dozen hard boiled eggs, peeled and chopped coarse. (Big pieces are good)
1/2 cup bacon, cooked and crumbled
1 Tbsp. parsley, chopped
1/4 cup sour cream
1/2 cup mayo (I use Hellmann)
1/2 tsp. garlic powder
1/2 tsp. onion powder
salt & pepper to taste

Set the cream cheese on the counter and allow it to come to room temperature. Peel and chop the hard boiled eggs. Add the crumbled bacon, and parsley. Mix well. Mix the cream cheese, sour cream, and mayo in a small bowl. Add the garlic and onion powder. Mix well. Add the cream cheese mixture to the bowl with the chopped eggs. Add salt and pepper to taste. Chill and serve. You could garnish with grated carrots, or diced scallions if you want.

I'm sure this would make a fabulous sandwich, but I usually just serve it with crackers.
