1 pkg thick sliced bacon cut into short strips
1 onion, chopped
3 lbs. potatoes, peeled and diced
3 Tbsp. Flour
2 1/2 c. milk, divided
Salt & Pepper to taste
Sour Cream
Chives, chopped
Cheddar Cheese

Directions:
Directions:
Brown bacon and onion together. Place potatoes in pot and cover with water, bring to boil and cook until tender. Pour off half of the water and set aside. . Mix together the flour and 1/2 cup milk. Add to the potatoes. Add in the remaining 2 cups of milk. Add the bacon and onion. Cook on medium heat until it thickens. Season with salt and pepper to taste. Add back some of the cooking water if it too thick. Spoon into bowls, and top with sour cream, chives and shredded cheddar cheese.
