1 envelope plain unflavored gelatin
4 Tbsp. coled water
3 egg whites
1 C. boiling water
¼ tsp. salt
1 tsp. vanilla
18 Graham crackers

Butter sauce:
⅓ c. butter
2 egg yolks
⅓ c. sugar
1 Tbsp grated lemon rind
2 Tbsp. lemon juice
⅓ c. heavy cream

Directions:
Directions:
Sprinkle Gelatin over cold water. Let soak 5 minutes. Add boiling water - stir until dissolved. Add sugar. Stir until dissolved. Let cool slightly and add egg whites (unbeaten), salt and vanilla. Beat with mixer at high speed until mix is light and resembles thick cream. Turn into 9x9x2 pan and let cool. Cut into 1 inch squares and roll in Graham cracker crumbs. Top with butter sauce.

Butter sauce: Beat the two egg yolks until thick and gradually add sugar (while beating). Add melted butter. Then add lemon rind and Lemon juice and blend. Fold in heavy cream and chill.
