Ingredients: 2 Tbsp. olive oil 1/4 cup chopped onions 1 Tbsp. minced garlic 3 Italian plum tomatoes, chopped 1/3 cup pitted & halved black Kalamata olives 1/3 cup halved pimento-stuffed green olives 2 tsp. anchovy paste 1 Tbsp. fresh parsley 1 Tbsp. fresh basil 1 Tbsp. fresh oregano ( or 1 tsp. dried) 1 tsp salt Fresh ground black pepper 1/2 stick (1/2 cup) butter, cut into 4 pieces

Directions:Heat oil in a skillet over high heat. Add onions and saute for 1 minute. Stir in garlic, tomatoes, black & green olives, anchovy paste, herbs, salt and pepper. Bring to a boil and simmer for about 3 minutes.
Reduce heat to medium and add the butter pieces, stirring. Remove from heat and continue to stir until the butter is melted and fully incorporated. |

Notes: I love this sauce on white fish (cod, grouper, sea bass)...or a meatier fish like grilled swordfish; this sauce on fish is lovely and red wine goes with it really well.
MARIAN'S WAY:
Make a Marinera Sauce and once you start to cook it down, add the black & green olives, anchovy paste and the herbs.
