Chicken & Shrimp Zoodle "Lo Mein" Recipe

For the homemade stir-fry sauce:

-1 cup chicken broth
-4 tbsp coconut aminos, or soy sauce
-1 tbsp rice wine vinegar
-2 tbsp arrowroot powder or cornstarch

For the "lo mein:"

-2 medium zucchini, washed with ends trimmed
-8 oz skinless boneless chicken thighs or breast, diced
-1 lb shrimp (I used 21)
-2 tbsp cooking oil of your choice
-1 8oz bag of your favorite stir fry veggies (I used onions, carrots, hot peppers, and edamame)
-1 tbsp grated fresh ginger
-2 cloves garlic, minced or grated
-kosher salt, to taste
-pepper, to taste

For the stir-fry sauce:

-Combine the chicken broth, soy sauce or coconut aminos, rice wine vinegar and 2 tbsp of water. Add the cornstarch or arrowroot powder and whisk together until smooth.

Zoodles:

-Using a spiralizer, cut the zucchini into long noodle like strips

Stir fry:

-Season the chicken with salt and pepper. Heat a large nonstick pan over medium heat. Add oil when hot and cook until browned on both sides and white throughout, about 2-3 minutes. Set aside. Do the same with the shrimp.

-Add the remaining oil and stir-fry the veggies. Add ginger and garlic, cook 2-3 minutes and set aside with the chicken.

-Pour the sauce mixture into the empty pan and cook, stirring often, until thickened and bubbling, about 1-2 minutes.

-Add the zucchini noodles to the sauce, mixing so the zucchini is covered in the sauce and cook until tender, should only take 1-2 minutes.

-Add the chicken and veggies back to the pan with thickened sauce. Mix well and enjoy!

I forgot to saute the ginger and garlic so I added it to the sauce while it was thickening.

I also added sriracha to my portion and it was delicious.

I also cooked the veggies first, then the chicken and shrimp, then the sauce and then added everything back at the end.
