Season your prime rib with butter and whatever seasoning rub you wish. Over a very hot bed of coals place the prime rib directly on top. Cook on both sides for about four minutes until a beautifully charred. Move to a roasting pan and cook for about an hour and a half until internal temperature reaches medium rare. Remove from heat and let stand 15 minutes at a minimum. Do not get in a hurry! Slice the prime rib into 1 1/2 inch steaks and return to a very hot grill for a minute and a half on each side until a nice chat mark is on the meet. Add more butter and additional spices and serve immediately.

You can also do this indoors using a conventional oven. Prepare your prime rib as mentioned above and run it under a broiler turning often to get a nice char on the meet. Turn off the broiler and move to the middle of the oven and cook at 325° until you get the internal temperature for medium rare. Remove and let stand for 15 minutes and then use a heavy cast-iron skillet to brown your steaks. Right before they're done at two or 3 tablespoons of butter and let it brown and spoon over the meat as it finishes up. Wonderful indoor technique.

This works very well and is a nice deviation on the classic prime-rib roast method.
