6 Red Potatoes, par-boiled and quartered
3 Tsp. olive oil
1/2 Tsp. Kosher Salt
1/4 Tsp. Black Pepper
1 Tsp. Red Pepper Flakes, 2 Tsp. if you like more heat
1/2 Vidalia onion, sliced really thin or chopped
3 Strips Bacon, cooked and crumbled
Scallions for garnish

Dressing:
1/4 Tsp. Stone Ground Mustard
1/4 Cup Mayo
2 Tsp. Red Wine Vinegar

Directions:
Directions:
Place potatoes in a large bowl and coat with olive oil, salt and pepper.
Put on the grill just long enough to get grill marks maybe 3 minutes.
When ready cool slightly and add the onions and bacon.
Drizzle with the dressing, toss and serve!

Sidenote: There is a fine line between par-boiled and mush. Good rule of thumb is to stick your knife in and shake it, if the potato comes off easily they should be par-boiled.

I do not grill a great deal so I used a grill pan to get the grill marks, you don't have to but I like the way it looks.
