2 Tbsp. butter
2 Tbsp. extra virgin olive oil
1 onion, peeled and diced
4 celery stalks, diced small
4 carrots, peeled and diced small
4 cloves minced garlic
2 bay leaves
2 quarts chicken broth or stock
3 cups cooked chicken, shredded or diced
3 cups wide egg noodles (more if desired)
Salt and Pepper to taste

1. In a large pot over medium, heat the butter and olive oil. Add the onion, celery, carrots, half the garlic and bay leaves. Season with salt and pepper. Cook until the vegetables soften, about 7 minutes, stirring occasionally.
2. Add the stock and simmer for 10 minutes.
3. Stir in the chicken, noodles and remaining garlic. Simmer until the noodles are cooked, about 10 minutes. Discard the bay leaves. Season to taste.
