10 C. riced potatoes
10 oz. melted butter
3/4 C. whipping cream
1/2 C. powdered sugar
2 1/2 tsp. salt
3 C. flour

Directions:
Directions:
Peel & boil potatoes; rice while hot.
Melt butter in small pan & add sugar, cream & salt. Mix into potatoes.
Let stand partially uncovered in refrigerator or until cold. (can put in your breezeway in the cool weather to do this also, if you have one!).
Just before rolling, mix in flour. Shape into small balls. Keep cool.
Roll on floured board until thin. Take on lefsa griddle til bubbly, then turn and brown slightly. Remove & let cool on paper bag or pillow case.
