Apple Walnut Bread Pudding Recipe

7 eggs
2 T Vanilla
2 c sugar
2 granny Smith apples (peel, dice)
3/4 qt heavy cream
1 c walnut pieces
1-1/2 T Cinnamon
1 loaf day old french bread - no crust

Bourbon Sauce
1/4 lb butter (1 stick)
1 pint Heavy cream
1/4 box light brown sugar
1/4 c bourbon

Directions:

Pull bread into small pieces, mix in apples and walnuts and fill 8" x 6" x 4" pan full. Whip sugar, cinnamon, vanilla, cream and eggs into a custard. Pour to cover bread. Mix well, pat down until smooth and level. Cover with foil and bake at 350º for 30 minutes. Remove foil and bake for another 20 minutes or until brown.

Bourbon Sauce
Melt butter. Over med. Heat, whisk in brown sugar. Stir continually until sugar is dissolved. Whisk in heavy cream and cook for about 5-8 minutes over low heat. Stir in the bourbon, cook down for 1 minute and remove from heat. Mix well before serving. Should be served warm.

Amy and I had this dessert at the Canyon Grill on top of Lookout Mountain in Chattanooga, TN when visiting my parents for the first time. It was so memorable, I almost proposed to her on the spot. After a lot of internet searching, I found the recipe, and it's soooo good.
