3 to 4 doz. oysters
1 c. chopped shallots
1/2 c. chopped parsley
1 1/2 c. chopped spinach
1/2 c. flour
1 c. melted butter
1 c. oyster juice
2 cloves garlic, minced
1/4 tsp. cayenne pepper
1/4 tsp. minced anchovies

Directions:
Directions:
Fill a pan with rock salt for each serving. Place in 400º oven to preheat salt. Make sauce by putting shallots, parsley and spinach through a food chopper. Stir flour into melted butter and cook for 5 minutes; do not brown. Blend in oyster juice, garlic, salt and cayenne pepper. Stir in the greens and anchovies. Simmer, covered, for 20 minutes. Remove cover and cook until thickened. Place half shell on rock salt. Fill each shell with an oyster. Put sauce in a pastry bag and cover each oyster. Bake in preheated oven of 400º for about 5 minutes or until edges of oysters begin to curl.
