1 (9-inch) unbaked pie shell
2 cups cooked mashed sweet potatoes (about 2 pounds)
2 eggs, well beaten
1 cup sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 stick butter (1/4 cup), melted
1 can (12 ounces) evaporated fat-free milk

1. Preheat oven to 425.
2. Bake pie shell for 10 minutes.
3. Reduce oven to 350.
4. Mix sweet potatoes with electric mixer in large bowl until smooth.
5. Stir in eggs, sugar, vanilla, cinnamon, nutmeg and salt.
6. Melt butter in the milk.
7. Gradually pour butter–milk mixture into potato mixture, stirring constantly.
8. Beat gently until well blended and smooth.
9. Bake 40 to 45 minutes or until filling is set and sharp knife inserted near center comes out clean.
10. Cool completely on wire rack. Refrigerate until serving time.
