Several yellow squash
1/2 small onion
1 egg
2 tablespoons flour
salt and pepper
oil for frying

Grate squash. Add remaining ingredients except oil. Heat oil in heavy frying pan . Shape squash into patties and fry until golden on both sides

This is my take on squash fritters. Mama and I used to try to come up with what we remembered and this was close. Mama knew the ingredients, but quantities are a guess. Baking powder might make them lighter and Mama didn't know if the flour was self-rising or not when Mommee made them.
