1 lb Crabmeat
1/2 stick butter
4 tbsp. flour
1 tsp. Old Bay Seafood Seasoning
Freshly ground black pepper to taste
2 cups half and half
3 eggs (divide yolks from whites)
1 tbsp. lemon juice

Directions:
Directions:
1. Heat oven to 400º F. In a saucepan over medium heat, melt butter (do not allow to brown). Add flour, 1 tbsp. at a time, and stir until all the flour is well blended.
2. Add the half and half and the Old Bay seasoning and ground pepper, stirring constantly until thickened.
3. Beat egg yolks. Add a little of the heated mixture to the yolks and stir well. Then, add the egg yolks to the sauce, stirring constantly.
4. Add the crabmeat, tossing gently (be careful not to break the lumps). Add lemon juice to the sauce and mix gently. Set aside.
5. In another bowl, beat the egg whites until stiff and gently fold into the crab mixture.
6. Pour into a soufflé dish and bake in a 400º oven for 40 minutes. Serve immediately.
