1 cup of flour
1/4 tsp. pepper
1 tsp. salt
5 slices of bacon
1/2 cup hot water
1 lb liver
1 medium onion, sliced

Directions:
Directions:
1. Heat oven to 350º F. Combine flour, salt and pepper. Dredge liver in flour mixture.
2. Lightly brown liver in hot oil, drain and place in shallow 2 quart casserole.
3. Cover with onions. Season with salt and pepper. Spread bacon over top.
4. Add 1/2 cup hot water, cover and bake in preheated oven for 30 minutes, adding more water as needed. Remove cover and bake 10 minutes more or until tender.
