1 Angel Food Cake
1 – 10 oz. pkg. sweetened, frozen sliced strawberries, thawed
1 pkg. (4 serving size) strawberry jello
1 cup boiling water
2 1/2 cups whipping cream, chilled and divided
2 1/2 tbsp. confectioners sugar
3/4 tsp. vanilla extract
4 fresh strawberries, sliced for garnish

1. Cut cake into 1 inch cubes.
2. Drain thawed strawberries, reserving juice.
3. Combine jello and boiling water in small bowl. Stir until jello is dissolved.
4. Add enough water to strawberry juice to measure 1 cup; stir into jello.
5. Refrigerate until gelatin is slightly thickened. Beat gelatin until foamy.
6. In large bowl, beat 1 cup whipping cream until stiff peaks form. Fold into gelatin along with strawberries.
7. Alternate layers of cake cubes and strawberry mixture in 10-inch tube pan. Press lightly. Cover and refrigerate overnight.
8. Unmold cake onto serving plate. Beat remaining 1 1/2 cups whipping cream, confectioners sugar and vanilla extract until stiff peaks form. Frost sides and top of cake. Refrigerate until ready to serve. Garnish with fresh strawberries.

*INSTEAD OF MAKING YOUR OWN WHIPPING CREAM, YOU CAN USE COOL WHIP IN THE CONTAINER OR WHATEVER BRAND OF WHIPPING CREAM YOU PREFER.
** FOR EASIER CUTTING, USE A KNIFE WITH A THIN SHARP BLADE
