3 c peeled and grated zucchini
3 c sugar
1/2 c lemon juice
3oz pkg of jello (any flavor)

Put the first three ingredients into a large sauce pan and cook for 20 min. Add any flavor of jello. Refrigerator and then seal with paraffin or freeze

This recipe came from Eric's mom. I can't say I ever recall her making Zucchini Jam, but I'm sure someone gave her the recipe during one of our crazy zucchini obsessions.
