1 tablespoon vegetable oil
1 small onion (about 1/2 cup chopped)
2 cloves garlic finely chopped (optional)
2 pounds lean ground beef
1 (796 ml. i.e. 28 oz. liquid) can tomatoes (chopped or whole)
2 (398 ml.) cans tomato sauce
1 teaspoon dried oregano or thyme or both
1/2 teaspoon ground black pepper
1 teaspoon salt
1 1/2 teaspoons ground cumin
1/4 cup chili powder
1/4 teaspoon ground cayenne pepper (or any hot sauce to taste)
2 tablespoons catsup or maple syrup

Directions:
Directions:
In a large pan heat oil on medium and cook onion until soft (about 5 minutes). Do not let brown.
Add chopped garlic if using and cook for 1 minute.
Add ground beef and stir. Cook over medium heat until slightly brown.
This will take 10 -15 minutes. Stir often.
If there is a lot of fat in the pan (depends on the quality of the ground beef) you may want to drain the mixture at this point.
Add tomato sauce and chopped tomatoes.
If you are using whole tomatoes break the tomatoes up when you add them. Add spices and cook gently for 15 to 20 minutes.

You can add whatever other vegetables you like. I often add chopped celery, carrots and/or peppers. Just add them before the meat and cook for a few minutes. The tomato products you use are also flexible. I have used tomato juice, tomato sauce, tomato paste, and canned tomatoes. I usually use salt free products.

After you have cooked the sauce you can adjust the spices by adding more so it is best to start with a fairly mild spice mixture and add more later. Spices vary in their intensity so proceed with caution.
