Ingredients: 1 12 oz box soba noodles 1 c creamy peanut butter (not natural) 3/8 c soy sauce 1-1/2 T sesame oil 1 1/4 c cooking water
Toppings: 1 english cucumber (match sticks) 1 bag match stick carrots
Optional Toppings: chopped peanuts, chopped scallions, chile garlic paste

Directions:While bringing 5-6 cups of water to a boil, combine the first three sauce ingredients. Prep the toppings while waiting for the water to boil and cooking noodles. Use a mandolin with the medium cross cut blade to create matchstick cukes or just dice finely. chop the peanuts and scallions for toppings. Cook the soba noodles according to the package. Reserve 1-1/4 cup cooking water before draining. Run cool water over the noodles to stop the cooking process. Set aside to drain. Combine the hot cooking water with the sauce to complete the peanut sauce. Mix the peanut sauce and noodles in a bowl to combine and serve. Add more peanut butter or water as needed to adjust to a thick sauce to coat the pasta. Adults - plate the noodles and top with cukes and carrots, scallions and peanuts and garlic paste if you like it hot. Great texture with the added crunch of the veggies Kids - Serve the noodles like spaghetti, with a side of the carrots and cukes as their veg. Note: Original recipe called for chicken to be cut into cubes and cooked in the boiling water first before cooking the noodles in the same water. I like to pull leftover chicken into strands and "hide" it in the spaghetti. The kids claim they don't like it with chicken, but when I do this, they don't even know it's there. |

Notes: This dish really is a peanut chicken with Soba noodles recipe, but we explained to the kids it was peanut butter spaghetti, and they smashed it. So that's our story and we're sticking with it. It's one of their favorite dishes.
