Low in Calories But Loaded In Flavor

1/4 c pineapple juice
2 T ketchup
2T lower-sodium soy sauce
1 1/2 ginger powder
2 garlic cloves, minced
4 skinless boneless chicken breasts
Cooking spray
3/4 t salt divided
1/4 t black pepper
2 cups hot cooked white rice
1/4 cup copped green onions


Directions:
Directions:
Combine first 5 ingredients. Reserve 1/4 c marinade. Place remaining marinade in a zip-top plastic bag. Add chicken to bag and seal. Chill 4 hours
Place chicken in a pan sprayed with Pam. Discard marinade. Cook chicken on medium heat for 6 minutes basting chicken with left over marinade. Sprinkle chicken with 1/2 t salt and pepper. Turn chicken over and cook another 6 min. basting with marinade. Cook another 6 min.

Serve with a side of rice and stir fried vegetables.
