2 lb. beef stew meat
2 C. potatoes
2 C. onions
2 C. carrots
2 C. celery
1 T. sugar
1 t. black pepper
½-1 t. basil
48 oz. V-8 juice (reserve 1 C.)
1 large can whole mushrooms with liquid

Directions:
Directions:
Mix 1 C. V-8 juice and 1 T. cornstarch together and set aside. Brown meat in large, heavy pot. Add other ingredients, pouring V 8 juice over, stirring well. Cover pot and cook on stove or bake at 250°F for 2 3 hours. During the last hour, pour in the reserved cup of V-8 juice and cornstarch mixture to thicken slightly.

This is good if you like one-dish meals – and freezes well.
